Made my recipe of the week at 9PM on Saturday night to get it in before the end of the week!
Looked online for a recipe using strawberries so that I could use up the berries that were getting over-ripe. Decided on this Diabetic Strawberry Pie recipe that I found on recipezaar. It has 5 out of 5 star reviews, even though some of the photos that people have submitted look horrifying!
I decided based on the photos to use much less yogurt.
SERVES 8
Ingredients
- 1 1/2 cups boiling water
- 1 (5/8 ounce) package sugar-free strawberry gelatin (or 2 .3 ounce packages)
- 3 cups sliced fresh strawberries
- 2 cups plain non-fat yogurt
- 1 deep dish graham cracker pie crust (10-inch)
- 8 whole strawberries
Directions

Place boiling water in large bowl. Stir in Jello till dissolved. Chill until slightly set– about 10- 20 minutes.

Stir in strawberries. Chill another 10 minutes.

Fold in yogurt.
- Pour mixture into graham cracker crust. Chill until firm– at least 4 hours. Cut into 8 wedges and place a whole strawberry on each wedge.
It was delicious!!!
